The owner takes a lot of his inspiration from seeing other people’s barbecue creations while putting his own spin on then. Papalote’s menu holds true to authentic, traditional, classic Mexican food. All of the items on the menu are a homage to the owner’s mother, featuring recipes adapted from her South Mexican heritage.
